Salad of Tuscan White Beans, Red Onion and Tuna
Ingredients:
* 6 ½ oz. cooked and flaked fresh tuna OR 1 can drained and flaked
* 1 cup cooked white beans (cannellini) or canned beans, rinsed and drained
* 1/3 cup finely chopped red onion
* 1 tsp. finely chopped fresh sage leaves
* 4 tbsp. Stonewall Kitchen Roasted Garlic Vinaigrette
* ½ clove garlic, minced
* 1 tsp. fresh lemon juice
* 1 tbs. extra virgin olive oil
* to taste salt and freshly ground black pepper
* 1 ripe tomato
* 2-4 tiny sage leaves to garnish
Instructions:
Combine tuna, white beans and onion together in a bowl. Blend sage with Roasted Garlic Vinaigrette and garlic. Pour over tuna and toss briefly. Add lemon juice, olive oil and black pepper; toss again. Line 2 plates with lettuce leaves and arrange salad in center. Surround with tomato wedges and top with sage leaves and serve. Serves 2.
