Sautéed Greens with Balsamic Vinaigrette
Ingredients:
* 1 teaspoon Extra Virgin Olive Oil
* 1 medium Red Onion sliced lengthwise
* 1 tablespoon chopped Fresh Ginger
* 1 pound Fresh Greens (spinach, chard, beet greens – pick your favorite) [You can substitute a 10 oz package of frozen greens.]
* 1 tablespoon Nancy’s Balsamic Vinaigrette
Instructions:
In a non-stick skillet sauté the onion and ginger in the olive oil for about five minutes. Add the greens and enough water to wilt them (a tablespoon or two depending on the type of greens). Cover and cook just until wilted. Add the vinaigrette and cook without the cover until the moisture has evaporated and the greens are coated with the vinaigrette.
